India is a country of unity with diversity. Almost each state has its own language, culture, dress, and food habits. I got this picture of Indian Special Food in the mail. I don't know the source of this picture, but interesting to share. If there are any copyrights, please let me know, I can use the link, instead of the picture.

I don't think that this site restricts itself to Indian Food, but sure we will start with this.


Basic food for the survival
1. Rice : Simple but the base food for South India and many parts of world. This is the main source for the carbohydrate. Raw rice, and Boiled rice are used to make the rice. Comparatively boiled rice is good for health. Brown rice is used in Chinese rice. This is very good for health since the rice is not polished to remove all the contents except the carbs.

The easiest way to cook rice is to use the Electric Rice cooker. Clean the rice with running water. For most of the rice put rice: water in the ratio of 1:2 using the measuring cup comes with the rice cooker. Please refer the maximum cup of rice allowed for your cooker. Increase or decrease the water to make the rice soft or rough. The principle is same for making rice in a utensil directly in the stove, or using the pressure cooker.

2. Thallippu : Most of the dishes need the thallippu. This is not a seperate dish, but a reference.
Take a required size of a pan, and add small quantity of cooking oil. After oil become little hot, add small quantity of kadugu (Mustard) seed. Be careful that these seeds will burst in the oil. Add little udaitha ullutham parruppu (split urad dal) and fry until the golden color. Optionally add curry leaves, Chilies etc.,

3. Paruppu (Dal): Use Thuvarai Paruppu (thoor dal) or Payatham Paruppu (moong dal) to make paruppu. Payatham paruppu is rich in content, and it is better to avoid on daily use.
Boil the parruppu. Is this the simplest procedure. To make it fast, you may a spoon of cooking oil with the water. Boiling in the pressure cooker is easier than using the vessel directly in the stove. Thallippu is optional. Adding tomato, fried onions, silantro, and salt is optional. When mix with rice, addingthe required salt, and ghee will add the taste.

4. Vegetable Curry (Fry): If you are a beginner, it is better to pick the vegetables we can eat raw, for example any one of Beans, Cabbage, Beat Root, Carrot, Cauliflower, and Broccoli or the combination. Chop the vegetables to smaller size as per your requirement.
Take a frying pan big enough for the vegetables. Do the thallippu. Add dry red chilies as per requirement. Add the vegetables in the pan. Add required salt in small quantity of water and add in the pan to fry. Cover the pan to cook. Mix the vegetables to cook even.
